How to cure your salmon and steelhead skeins

  1. Keep fresh eggs cool. Cure within 24 hours for best results. Works best on eggs at room temperature. Do not freeze eggs before curing.
  2. Drain off excess  juice from eggs and remove blood. Small skeins can be cured whole, cut large skeins into smaller sections.
  3. Sprinkle cure to cover eggs completely.
  4. Set eggs out on screen or paper towel to air dry for 24 to 48 hours, depending on humidity and texture desired. Dry eggs slowly…do not expose to heat or sunlight.
  5. For best results, package in an airtight container when eggs reach desired texture.
  6. Sprinkle fore borax on eggs for storage. Remember, the more cure, the drier your eggs.
  7. Cured eggs can be stored in a refrigerator for months or in a freezer for up to a year.
